Chives, finely chopped - 2 tablespoons 30 mL To discover! Preparation Switch to cook mode Step 1 Preheat the oven to 230 °C (450 °F). Line a baking sheet with parchment paper or with a silicone baking mat. Step 2 In a large non-stick skillet, brown the onions in the canola oil and butter. Then, add the spinach. Cook until the spinach wilts. Season with salt and pepper, to taste. Keep warm. Step 3 Meanwhile, beat the egg whites until stiff peaks form. Transfer the egg whites onto the baking sheet and make two distinct nest shapes. Note: It’s important to dip the center of the egg whites so that you can put the yolk later on. You can easily do this with a spoon. Step 4 On the same baking sheet, put together your croque madames, starting with a slice of bread, followed by ham and onions, and finishing with another bread slice. Sprinkle cheese on top. Step 5 Cook in the oven for 4 minutes (the croque madames and egg whites only!) Step 6 Place the egg yolks on the nest-shaped whites. Cook 4 more minutes. Put the cloud-eggs on top of the croque madames. Garnish with chives. Serve immediately. Like it? Share it!
