In a large bowl, mix all the spice mix ingredients. Add the quinoa and oat.
In a pan, over medium heat, simmer the maple syrup, milk, and espresso for 2 minutes. Do not bring to a boil. Remove from heat.
Then, incorporate the liquid preparation to the dry ingredients. Transfer into a sealed container.
Refrigerate overnight. The next morning, heat up and split into 4 bowls. Finally, garnish with skyr and other toppings of choice.
