Preparation Passer en mode cuisine 1. In a large glass or stainless bowl, soak the sweet potatoes in the boiling water for 20 minutes. 2. Drain and pat dry with a clean cloth or paper towel. 3. In the same bowl (dried), mix together the remaining ingredients. Then, add the sweet potatoes and toss gently. 4. In a large non-stick pan, heat a drizzle of vegetable oil. 5. Add about 60 ml (¼ cup) of the preparation. Press lightly. Cook 2 minutes on each side. Drain on paper towels if necessary. Repeat for the other patties. 6. Finally, serve with one of our homemade mayonnaises.
