Beaten eggs
Cold cooked rice
Sesame oil
Chopped green onions (white and green parts separated)
Chopped fresh garlic
Diced red bell pepper
Snow peas, cut into thirds
Cooked chicken, diced
Soy sauce
Oyster sauce
Sambal Oelek
Salt and pepper

To begin, beat half of the eggs in a large bowl, then mix them with the cooked rice. Set aside.
In a large skillet, heat sesame oil (or vegetable oil) over medium-high heat. Sauté the white parts of the green onions and garlic for 3 minutes. Add the bell pepper and snow peas and continue cooking for 3 minutes.
Add the rice and stir-fry over high heat for 5 minutes, stirring constantly. Push the rice to one side of the pan. At medium heat, crack the remaining 3 eggs beside it and stir constantly until they resemble scrambled eggs. Then mix the eggs with the rice.
Incorporate the cooked chicken cubes into the skillet and season with soy sauce, oyster sauce, and sambal oelek. Salt and pepper to taste.
Remove from heat and stir in toasted sesame oil and sesame seeds. Serve on a large plate and garnish with the remaining green onions. If necessary, place the hot sauce and soy sauce nearby. It’s also possible to drizzle a bit of lime juice over the dish.
