All-purpose flour
Baking powder
2% M.F. milk
Large egg
Vegetable oil
Large eggs
Egg whites
Salt and pepper
Cooked bacon slices
Low-fat Swiss cheese, grated
Green onions, chopped
Hot sauce
In a large bowl, combine the flour with the baking powder. Make a well in the center and add the milk and the egg. Mix until the preparation is homogeneous.
In a non-stick pan, over medium heat, heat the oil. Then, pour 30 ml (2 tablespoons) of the pancake mix and cook 2 minutes, turning halfway through the cooking. Repeat until there is no more pancake mix, which should make about 12 pancakes.
Once all the pancakes are cooked, place them one at a time on top of an upside down glass and cook in the microwave at maximum power for about 50 seconds. Repeat for each pancake. This step will allow them to harden like taco shells.
For the fillings, heat oil in a non-stick pan over medium heat. Then, cook the eggs and egg whites, stirring constantly to scramble them. Season with salt and pepper.
Finally, add the bacon and scrambled eggs into the pancake shells. Sprinkle with cheese and green onions and drizzle hot sauce on top.
