Water
Potato starch
Eggs
Vanilla extract (or any other essence)
In a blender, mix all the ingredients together until the batter is smooth.
In a non-stick and slightly oiled pan, pour 75 ml (1/3 cup) of the crepe batter. Spread immediately into the pan by making circular motions.
Cook over medium heat for a few minutes. Turn when the sides are golden and cook 1 or 2 more minutes.
Repeat until all the crepes are done.
