Zucchinis, sliced
Greek chicken marinade
Red bell peppers, in large chunks
Red onion, in large chunks
Feta cheese, in cubes
Plain Greek yogurt
cucumber, grated
Lemon zest and juice
Salt and pepper
Preheat the barbecue to its maximum temperature.
Assemble the skewers, alternating between vegetables, feta cheese, and marinated chicken (Greek marinade).
Cook on the barbecue, turning regularly for 15 minutes or until the chicken is well cooked. Finally, reduce the heat to finish cooking the chicken.
In a bowl, mix together the yogurt, grated cucumber, lemon juice, and lemon zest. Season with salt and pepper, to taste.
