Pineapple chunks, fresh or frozen
Enriched coconut milk (or any other plant-based milk)
Coconut Greek yogurt (0 to 2% M.F.)
Maple syrup
Fresh pineapple for garnish
Blend all the ingredients together until smooth.
Pour the smoothie into two glasses and garnish with a pineapple slice, if desired. Enjoy!
