Sweet potatoes, cut into sticks
Cornstarch
Tapioca starch
Vegetable oil
Chipotle chili pepper
Garlic powder
Salt and pepper
Place the sweet potato sticks in a bowl filled with water. Let stand for 1 hour.
Drain the sweet potatoes using a colander. Rinse them under cold water and dry them using a clean cloth or paper towels.
Preheat the oven to 220 °C (425 °F). Line a large baking sheet with aluminium paper. Spray oil.
In a large airtight bag or large sealable container, mix half the sticks with 5 ml (1 teaspoon) of cornstarch and tapioca starch. Make sure each stick is well coated.
Then, spread them unto the baking sheet. Repeat for the remaining sweet potato sticks.
Cook in the oven for 15 minutes. Turn half way through cooking. Then, cook 15 more minutes.
Spread them out so they are well apart.
Turn off the oven and slightly open the door. Let stand the fries in the oven for 10 minutes.
Remove from the oven. Season with salt and pepper. Serve the sweet potato fries with a dip or homemade mayonnaise. Enjoy!
