Clementines, peeled and cut in halves
In a pot, mix the clementine juice with the sugar. Bring to a boil and let simmer 5 minutes or until the syrup thickens.
Preheat the oven to 350 °F (180 °C). Oil the 12 cavities of a muffin tin.
In a bowl, mix together the egg, milk, yogurt, lime juice, lemon juice, brown sugar, oil, and orange blossom water.
Add the psyllium cereals and let rise 5 minutes.
Mix the flour with the baking powder. Incorporate to the muffin preparation. Mix until the batter is smooth.
Place 1 tablespoon (15 ml) of clemetine syrup and half a clementine (cut side down) in each cavity of the muffin tin. Then, add the batter on top. Bake 30 minutes.
