2% M.F. milk
Large eggs
Pasteurised liquid egg whites (or 2 egg whites)
Olive oil
Lemon (for the zest)
Dijon mustard
Salt and pepper
Multigrain breads, diced
Kale, coarsely chopped
Red onion, minced
Goat cheese, crumbled
Preheat the oven to 180 °C (350 °F). Grease a 23 cm (9″) round mould.
In a small bowl, whisk together the milk, eggs, egg whites, olive oil, lemon zest, mustard, salt, and pepper.
In the mould, create layers with the bread, kale, onion, and a quarter of the cheese.
Then, pour the liquid preparation unto the dry ingredients, making sure to soak them all.
Garnish with the remaining goat cheese. Cook in the oven for 1 hour. Serve hot.
