Basil pesto
Powdered skimmed milk
Dried tomatoes, finely chopped
Mozzarella cheese, partially skimmed, grated
Pepper
Skimmed milk, divided
Cauliflower, broccoli, or romanesco cabbage, in florets
Fresh basil, chopped
In a bowl, mix the pesto with the powdered milk.
In a pan, over medium-low heat, mix together the dried tomatoes, mozzarella, pepper and 80 ml (1⁄3 cup) of skimmed milk. Cook and stir frequently until the milk is absorbed. Repeat twice with the remaining milk. Once the dip is smooth, add the pesto mix.
Meanwhile, blanch the vegetables (in a steamer or silicone papillote) in the microwave.
Finally, garnish the protein dip with basil, if desired, and enjoy with vegetables and bread!
