Large eggs
Chorizo, diced
Colourful bell peppers, diced
Tomatoes, diced
Mushrooms, finely chopped
Spinach, chopped
Parmesan cheese, grated
Green onions, finely chopped
Salt and pepper
Chives, finely chopped
Bring a large pot of water to a boil.
In a bowl, beat the whole eggs and egg whites.
In a silicone baking bag, combine the chosen ingredients with 125 ml (½ cup) of the egg preparation. Seal the bag and mix vigorously. Make sure there is no air in the bag. Repeat for the 5 other omelettes.
Place the bags in the pot of boiling water and reduce the heat to medium. Cook for 15 minutes. Open the bags and transfer the omelettes unto plates. Serve.
