Preheat the oven to 200 °C (400 °F). Mix all the crumble ingredients.
Note: The almond crumble is optional, but is strongly recommended if you want to add a crispy side to your roasted pears dish.
Cook for 10 to 12 minutes on a baking sheet lined with a silicone baking mat or parchment paper.
Meanwhile, melt the butter in a casserole. Sprinkle icing sugars onto the pears.
Gently place the pears in the hot butter (cut side down). Caramelize for about 5 minutes. Add the spices.
Once the pears reach a nice colour and the butter is light brown, deglaze the casserole with white wine. Let reduce by half.
Cook in the oven for 15 minutes.
If desired, add vanilla Greek yogurt at the bottom of a shallow dish. Then, transfer the pears onto the yogurt. Pour the reduced wine on top. Garnish with the almond crumble, a little maple syrup, and mint leaves.
