First, place the eggs in a pot and cover them with cold water.
Cover the pot and bring to a boil.
Remove from heat and let stand the eggs in the water for 20 minutes.
Rinse the eggs under cold water before peeling them. Lightly roll the eggs on a work surface to loosen the shell, then remove it slowly under cold water.
Cut the more pointed tip of each egg. Keep the top parts and finely chop them.
Using a melon baller, remove a part of the egg yolks only.
In a bowl, mix together the Greek yogurt, mayonnaise, green onions, chopped egg parts, and egg yolks. Season with salt and pepper.
Split the preparation between the 12 hard-boiled eggs.
Season and garnish with sesame seeds.
