Cut the chicken breast into small pieces. Transfer into a bowl and add the canola oil, seasoning, and egg white. Gradually incorporate the cornstarch as you mix the ingredients together.
In a saucepan, heat the oil and fry the chicken pieces for about 6 minutes or until they are golden. Keep warm.
Preheat and oil the waffle maker. Meanwhile, in a large bowl, mix together all the waffle ingredients. For the best result possible, blend the preparation using a food processor a few seconds.
Using an ice cream scoop, make balls (the waffle preparation should bind easily. If needed, add an egg). Then, cook them 5 to 7 minutes or until the waffles are crispy.
In a small bowl, mix together all the hot sauce ingredients. Place each element as well as the filling options suggested in the introduction in the center of the table. Enjoy!
