Bacon slices
Maple syrup
Sweet potatoes, diced
Curry powder

Bell pepper, diced

Mushrooms, finely sliced
Tomato, cut into wedges

Preheat the oven to 200 °C (400°F). Line 2 baking sheets with parchment paper or a silicone baking mat.
Place the bacon slices on one baking sheet. Then, baste each slice with maple syrup. Set aside.
Mix the sweet potatoes with half the olive oil and curry powder directly unto the second baking sheet. Place both sheets in the oven and cook for 15 minutes.
Remove the bacon if it is crispy and sticky. Otherwise, cook a few more minutes until desired doneness. Keep warm.
Add the other vegetables (except the tomato) and the remaining olive oil on the sweet potato baking sheet. Cook 10 to 12 more minutes.
Meanwhile, heat a large non-stick pan. Melt the butter, then cook the eggs sunny side up. Season with salt and pepper.
Finally, place all the ingredients in the center of the table so everyone can create their own breakfast bowl.
