Ingredients: White bean banana bread; Medium bananas, 3 (3 ); White beans, rinsed and drained, ½ cup (95 g); Unsweetened applesauce, ¼ cup (60 mL); Eggs, 2 units (100 g); Maple syrup, ½ cup (125 mL); Vanilla extract, 1 teaspoon (5 mL); All-purpose flour, ¾ cup (100 g); Whole wheat flour, ¾ cup (95 g); Ground cinnamon, 1 teaspoon (5 mL); Baking soda, 1 teaspoon (5 mL); Baking powder, 2 teaspoons (10 mL); Quick frosting; Icing sugar, ½ cup (65 g); Milk, 1 tablespoon (15 mL); Banana marshmallows, 12 units (40 g)

Preparation

Preheat the oven to 350 °F (180 °C). Butter a 9 x 5″ (23 x 13 cm) loaf pan or line it with parchment paper.

In a blender, puree the bananas with the white beans, applesauce, eggs, maple syrup, and vanilla extract until smooth. Set aside in a bowl.

In another bowl, mix together the 2 flours, cinnamon, baking soda, and baking powder. Incorporate the dry ingredients to the wet ingredients. Pour into the loaf pan.

Cook in the oven for 1 hour or until a toothpick inserted in the middle comes out clean. Let cool at room temperature for 10 to 15 minutes before unmolding. Let cool completely.

Mix all the frosting ingredients together in a small bowl.

Place the bread on a serving plate. Spread the frosting on top of the bread.
