To cut the cucumbers into accordion slices, start by cutting off the ends of the Lebanese cucumbers.
Working with one cucumber at a time, place wooden sticks, skewers, or chopsticks on each side of the cucumber. These sticks will serve as guides to prevent the knife from cutting all the way through the vegetable.
Using a knife, make diagonal cuts at regular intervals along the length of the cucumber. Turn the cucumber over and repeat the diagonal cuts at regular intervals, making sure to alternate with the previous cuts. This will create the accordion effect when the cucumber is stretched. Repeat steps 2 and 3 with all the Lebanese cucumbers.
Gently separate the cucumbers to reveal the accordion effect and place them on a serving plate. Garnish with Asian sesame dressing and fresh cilantro leaves and serve.
