Crushed chili flakes
Zucchinis, in spirals (small)
Yellow bell pepper, diced
Cherry tomatoes, cut in halves
Cocktail bocconcini, cut in halves
In a small bowl, mix all the dressing ingredients using a whisk. Set aside.
In a salad bowl, mix all the salad ingredients.
Pour the dressing onto the zucchini salad and gently mix.
Sunflower, radish, arugula, beet microgreens… There are so many options! That being said, basil microgreens go very well with the bocconcinis and tomatoes of this recipe! If you don’t have microgreens at home, you can simply replace them by arugula.
