There are recipes that never go out of style. But this year, we reinvent the classic mayonnaise and paprika deviled eggs with an avocado version. A new flavour, a beautiful colour, better fats… all excellent reasons to adopt this recipe as your new classic. You will love these hard-boiled avocado deviled eggs!
Large hard-boiled eggs, shelled and cut in halves
Fresh cilantro, chopped
Chives, finely chopped
Salt and pepper
Delicately remove egg yolks. Set aside the egg whites on a plate. Place 3 egg yolks in a bowl (refrigerate the 3 others for another use).
Add the avocado, cottage cheese, and lime juice in the bowl. Coarsely crush with a fork.
Then, incorporate the cilantro, chives, salt, and pepper.
Finally, fill each egg white with 15 ml (1 tablespoon) of the preparation and garnish with smoked paprika and/or chili powder.
There are many recipes in which you can reuse your eggs, so don’t throw them away! For example, you could add them in a green salad or make a sandwich. Each egg yolk provides 3 additional g of protein to your lunch!
