Place all the dressing ingredients in a food processor and puree until smooth.
In a large pan, bring water to a boil. Blanch the vegetables a few seconds.
Place the vegetables into a bowl filled with ice-cold water, then drain.
Carefully prepare salad plates and drizzle the dressing on top.
