Just like raspberry muffins, this simple recipe with strawberries makes a healthy (but slightly gourmet) dessert or snack for your lunch box! Do not hesitate to double the recipe!
Quick cooking oats

Preheat the oven to 350 °F (180 °C).
In a large bowl, mix together the eggs, vegetable oil, milk, and maple syrup.
In a second bow, mix together the flour, quick cooking oats, and baking powder. Incorporate the dry ingredients to the wet ingredients and mix until homogeneous.
Add the strawberries and white chocolate chips. Mix well.
Pour the preparation in greased muffin molds or into paper cups.
Mix all the homemade granola ingredients. Finally, cook the muffins for 25 minutes or until a toothpick inserted in the middle comes out clean.
Your muffins seems to dry up after a few minutes? Well, they are now perfect to make croutons! Simply cut them into cubes and cook them 20 additional minutes in the oven.
