Extra-virgin olive oil

Lemon zest
Cider vinegar
Parmesan cheese (or Pecorino)
Dijon mustard
Currants
Carrots, grated
Almonds, sliced
French shallot, finely chopped

Salt and pepper
In a small bowl, mix all the dressing ingredients. Set aside.
In a large bowl, mix all the salad ingredients.
Add the lemon dressing to the kale and almond salad.
