Doesn’t everybody love maple? This beloved flavour is perfect for many recipes, just like these healthy energy balls! Besides, you can easily bring this snack anywhere during a busy day. It will bring you enough energy to finish your day well, while also satisfying your sweet tooth.
If you don’t have puffed quinoa in your pantry, you can easily substitute it with any other puffed cereal. For example, you could simply use puffed rice (Rice Krispies!).
Dried dates, pitted
Quick cooking oats
Ground flax seeds
Soak the dates in warm water for a few minutes, then drain.
In a food processor, grind the cashew nuts until you get a coarse powder.
Then, add the dates, oat flakes, ground flax seeds, and maple extract. Choosing the pulse option, grind all the ingredients until the texture is sticky.
Add the puffed quinoa and mix well.
Make a dozen ping-pong-sized balls.
Roll the energy balls into the maple sugar. Refrigerate.
Don’t have maple sugar on hand? No problem! You can simply use brown sugar instead. Plus, it’s more likely that you have some in your pantry already.
