Onion, finely chopped
Broccoli, coarsely chopped
Bell pepper, cut into small dices
Unsalted butter
Olive oil
Salt and pepper
Cherry tomatoes
Garlic clove, finely chopped
Thyme sprig
Eggs
Milk
Cheddar
Fresh thyme, finely chopped
Preheat a large non-stick pan. Add the butter and oil. Fry the vegetables a few minutes. Keep warm.
Meanwhile, vigorously whisk the omelette ingredients in a bowl. Set aside.
In the same pan, add a bit of olive oil, if necessary. Then, fry the tomatoes, garlic, and thyme strig. Cook a few minutes or until the tomatoes burst. Keep warm.
Add a bit of butter, if necessary. Pour the omelette preparation. Garnish with half the sautéed vegetables (broccoli mix only). Cook for a few minutes.
Gently fold the omelette in half when still slightly runny. Cook a few more minutes until desired doneness.
Cut the omelette in half. Garnish with the remaining vegetables, the tomatoes, and the fresh thyme. Serve with a crusty bread and cup of coffee.
