Unsweetened soy beverage
Coconut Greek yogurt
White beans, rinsed and drained
Chia seeds
Maple syrup
Blue Majik powder (see box below)
Vanilla extract
Blueberries
Blackberries
Shredded coconut
In a blender, mix the soy beverage, the yogurt, and the white beans until the texture is smooth. Pour into a bowl.
Add the chia seeds, the maple syrup, the Blue Majik powder and the vanilla. Mix well.
Pour the mix into 2 sealed containers. Cover and refrigerate overnight.
Garnish with blueberries, blackberries and shredded coconut before serving.
