All-purpose flour
Salt
Eggs
Japanese panko breadcrumbs
Grated parmesan
Edamames, shelled and cooked
Plain Greek yogurt
Hot sauce
Preheat the oven to 200 °C (400 °F). Line a baking sheet with a silicone baking mat or parchment paper.
In a bowl, mix the flour with the salt. In another bowl, whip the eggs. Then, in a third bowl, mix the breadcrumbs with the parmesan cheese.
Coat the edamames in the flour, then in the beaten eggs, and finish with the panko breadcrumbs.
Note: these steps can be done with a slotted spoon.
Spread the edamames on the baking sheet in one layer.
Cook in the oven for 12 minutes or until the edamames are golden.
Meanwhile, prepare the spicy yogurt. Adjust seasoning to taste.
Finally, serve the parmesan edamame bites with the spicy yogurt.
