Small potatoes, cut in halves
Olive oil
Dried rosemary
Garlic cloves, chopped
Raw salmon fillet
Broccoli, in florets
Fresh parsley, chopped
Salted butter, melted
Lemon juice
Dry white wine
Salt and pepper
Preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper or aluminium foil.
In a bowl, mix together the small potatoes, olive oil, rosemary, and 1 chopped garlic clove (5 ml). Spread unto the baking sheet. Cook for 20 minutes.
Move the small potatoes to the left side of the sheet pan. Place the salmon filets in the center and the broccoli on the right side.
Garnish the salmon fillets with the remaining garlic and parsley.
Mix the melted butter with the lemon juice and white wine. Drizzle the mix unto the salmon and broccolis. Season the entire sheet pan with salt and pepper.
Cook about 15 minutes or until the fish is opaque. For grilled salmon, finish cooking with the broiler for 2 minutes. If desired, serve with lemon slices.
