Preheat the oven to 190 °C (375 °F). Line 2 baking sheets with a silicone baking mat or parchment paper.
Melt the butter and cook until golden. Strain and set aside.
In a small bowl, mix together all the dry ingredients. Set aside.
Cream the brown butter and brown sugar with a hand mixer. Add the eggs and mix well. Then, add the applesauce and vanilla extract.
Incorporate the dry ingredients to the wet ingredients. Add the chocolate chips and mini marshmallows. Mix well.
Using an ice cream scoop or a 60 ml (¼ cup) measuring tool, make dough balls and place them on the baking sheets.
Finally, bake the cookies in the oven for 12 minutes or until golden, one baking sheet at a time. Repeat these steps for the second sheet. Let chill completely before serving.
