Have you ever thought of eating energy balls not only as a snack but also as a breakfast? Protein energy balls are super versatile and delicious! Besides, they’re quite similar to a normal breakfast in terms of nutritional values. And it’s a nice change from the classic cereals or toasts. For this morning version, we highly recommend that you add coffee in the recipe!
SIMPLY DELICIOUS: Prepare this protein energy balls recipe as a snack for the following days, just like you would for these nut bars!
Large flake oats
Rice crispie cereal
Vanilla or mocha plant protein poweder
Date puree (see box below)
Small chocolate chips
Line a 23 cm (9 po) square pan with parchment paper.
In a large bowl, mix the coffee, oat flakes, almond flour, rice crispie cereals, powder, hazelnuts and salt.
In a microwave-safe bowl, at medium heat, heat the honey, date puree, coconut oil and vanilla for 30 seconds. Mix well. Pour onto the dry ingredients and stir until the preparation is damp. Add the chocolate chips.
Pour the mix into the pan et press firmly for a smooth surface.
Let cool in the refrigerator for 15 minutes. Take out and shape into 24 balls using about 15 ml (1 tablespoon) for each. Keep in the refrigerator.
Date puree in energy balls? Yes! In a microwave-safe bowl, mix 400 ml (1 ¾ cup) of water with 450 g (1 lb) of chopped dates. Cook in the microwave for 3 to 4 minutes. Mix in a food processor until the texture is slightly lumpy and thick. Once it’s done, add it in your energy balls for a delicious result!
