Cauliflower rice can be kept a few days in the refrigerator. It’s shelf life however extends when vacuum-packed. To avoid any waste, you could also freeze it in a sealed container. Then, when ready to use, simply add it to your favourite meal at the end of cooking or let it thaw for a few minutes.

In a food processor, simply grind the cauliflower, a quarter at a time, to get pieces of even size (about the size of a grain of rice). Set aside.
