Sweet potatoes, grated
Boiling water
Eggs
Hot sauce of choice
Green onions, finely chopped
All-purpose flour
Baking powder
Cornstarch
Salt and pepper
In a large glass or stainless bowl, soak the sweet potatoes in the boiling water for 20 minutes.
Drain and pat dry with a clean cloth or paper towel.
In the same bowl (dried), mix together the remaining ingredients. Then, add the sweet potatoes and toss gently.
In a large non-stick pan, heat a drizzle of vegetable oil.
Add about 60 ml (¼ cup) of the preparation. Press lightly. Cook 2 minutes on each side. Drain on paper towels if necessary. Repeat for the other patties.
Finally, serve with one of our homemade mayonnaises.
