Have you been looking for an easy salmon recipe all these years? Well, you can stop looking! BPT has the perfect solution: a delicious salmon that you can simply cook in the oven. Plus, this recipe includes a sauce made with butter and lemon juice that’s super quick to prepare!
Prefer BBQ or teriyaki salmon? In fact, all salmon recipes are tasty! Besides, you can substitute the broccolis of this reicpe with any other green or colourful veggie of your choice. Asparagus, Brussels sprouts, and green beans are excellent alternatives!
Small potatoes, cut in halves
Garlic cloves, chopped
Raw salmon fillet
Broccoli, in florets
Fresh parsley, chopped
Salted butter, melted
Dry white wine
Salt and pepper
Preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper or aluminium foil.
In a bowl, mix together the small potatoes, olive oil, rosemary, and 1 chopped garlic clove (5 ml). Spread unto the baking sheet. Cook for 20 minutes.
Move the small potatoes to the left side of the sheet pan. Place the salmon filets in the center and the broccoli on the right side.
Garnish the salmon fillets with the remaining garlic and parsley.
Mix the melted butter with the lemon juice and white wine. Drizzle the mix unto the salmon and broccolis. Season the entire sheet pan with salt and pepper.
Cook about 15 minutes or until the fish is opaque. For grilled salmon, finish cooking with the broiler for 2 minutes. If desired, serve with lemon slices.
Don’t have dry white wine at home to make this recipe? No problem! You can simply leave it out or substitute it with the same quantity of chicken broth. In any case, your oven-baked salmon will be delicious!
