Fortunately for us (and to our tastebuds’ delight), Quebec is also a big asparagus producer! So, here is the best recipe to make with our local asparagus. Quick! Olive oil - 1 tablespoon 15 mL To discover! Onion powder - 1 teaspoon 5 mL To discover! Salt and pepper - To taste To taste To discover! Homemade or shop-bought puff pastry - 200 g 200 g To discover! Egg, lightly beaten - 1 1 To discover! Parmesan cheese, grated - ½ cup 55 g To discover! Preparation 1. Preheat the oven to 200 ºC (400 ºF). Line a baking sheet with a silicone baking mat or parchment paper. 2. Snap off the tough bottom part of the asparagus stems (about 3 cm / 1″). 3. In a shallow dish, gently toss the asparagus with the olive oil, onion powder, salt, and pepper. 4. Then, cut the dough in long strips of about 2 cm x 20 cm (0.5″ x 7″). Roll one strip around each asparagus. 5. Baste the asparagus spirals with the beaten egg and garnish with parmesan cheese. 6. Finally, cook in the oven for 10 minutes or until the dough is golden. A vegan version! For a vegan version of this dish, substitute the parmesan cheese with nutritional yeast and make sure the puff pastry you use is vegan.
