How can one not love avocado toasts? With an avocado puree or ripe avocado slices, an egg, and a toasted bread, you have all the ingredients to make this light meal!
This recipe is super easy to adapt. For example, you could substitute the feta cheese with goat cheese. Besides, if your avocados are not yet ripe, you could make a cottage cheese toast instead! Pumpkin seeds, red onion, herbs (such as fresh basil), and a drizzle of balsamic vinegar also make fine additions!
Frozen corn kernels
Salt and pepper
Toasted bread slices
Feta cheese, crumbled
Green onions, chopped
In a small bowl, mix all the everything bagel spice ingredients.
In a non-stick pan, preheat some canola oil. Brown the corn kernels. Set aside and keep warm.
In a small bowl, crush the flesh of the avocados. Add the everything bagel spice.
In a pot filled with boiling vinegary water, poach the eggs one at a time for 2 to 3 minutes. Lightly dry the eggs on a clean cloth or paper towel.
Toast the bread slices.
Assemble the avocado toasts starting with the avocado puree, then adding the grilled corn, poached egg, and feta cheese. Sprinkle paprika on top and garnish with green onions.
The trick is to add 15 ml of white vinegar to a pot of boiling water and to quickly stir the water to create a swirl before cracking the egg. Cook one egg at a time and remove them with a slotted spoon. Ta-da! You’ve successfully poached your eggs!
