Is avocado a fruit or a vegetable? While often prepared like a vegetable, avocado is actually a fruit! There are many myths regarding this fruit rich in good fats. Yet, its consumption is associated with a better global diet, a good nutrient intake, as well as a reduction in risks of suffering from metabolic syndrome (a state which increases risks of cardiovascular diseases). And although the avocado is rich in fats, the latter are good for the heart. Plus, they even contribute to satiety!
Here is the perfect avocado recipe for lunches or picnics: the quinoa salad with strawberries, avocados, and tuna!
PSST! Serve this quinoa salad directly into avocado shells for a unique presentation!
Flaked light tuna in water, drained
Strawberries, cut into small dices
Grenoble walnuts, crushed
Salt and pepper
In a large bowl, mix together all the ingredients except the avocados and lime juice.
When ready to serve, cut the avocados in half lengthwise and remove the seed using a knife.
Then, remove about 30 ml (2 tablespoons) of the flesh of each avocado and transfer into a bowl. Drizzle the remaining portions with lime juice to prevent them from turning brown.
Using a fork, crush the avocado flesh you just removed until you get a smooth and homogeneous puree. Incorporate the remaining lime juice and season with salt and pepper.
Mix this preparation with the other filling ingredients. Stuff the avocados and serve immediately.
A study on healthy overweight adults showed that eating half an avocado for breakfast considerably reduces hunger and the desire to eat while also increasing satiety. So don’t avoid good fats and make this avocado and tuna salad!
