Yet, these green vegetables have great qualities: they are economical, delicious, as well as rich in fibers, vitamin C, and vitamin K. Frozen green peas, thawed - 3 cups 750 mL To discover! Plain Greek yogurt - ⅓ cup 75 mL To discover! 15% M.F. table cream - ⅓ cup 75 mL To discover! Rice vinegar - 2 tablespoons 30 mL To discover! Salt and pepper - To taste To taste To discover! Preparation Switch to cook mode Step 1 In a non-stick pan, brown the French shallots in butter over medium heat. Add the garlic puree and remove from heat. Step 2 In a large bowl, mix the peas with the shallot and garlic preparation. Step 3 Add the yogurt, cream, and rice vinegar. Set aside. Step 4 In a pot, bring water with a pinch of salt and a bit of white vinegar to a boil. The volume of water most completely cover the eggs. Step 5 Once the water boils, delicately add the eggs. For a perfectly soft boiled egg, do not cook more than 6 minutes. Step 6 Rinse the eggs under cold water before peeling them. Lightly roll the eggs on a work surface to loosen the shell, then remove it slowly under cold water. Step 7 Cut the soft boiled eggs in halves and add on top of the green pea salad. Step 8 Garnish with mint leaves and microgreens. Step 9 Finally, season to taste. Like it? Share it!
