Plain Greek yogurt - ¾ cup 180 mL To discover! Unsweetened almond beverage - 1 cup 250 mL To discover! Vanilla extract - 1 teaspoon 5 mL To discover! All-purpose white flour - cup 250 mL To discover! Sugar - 2 ½ tablespoons 30 mL To discover! Baking soda - ½ 2.5 mL To discover! Salt - 1 teaspoon mL To discover! Cinnamon or nutmeg - Optional Optional To discover! Preparation Protein crepes 1. In a large bowl, mix together the Greek yogurt, flour, almond beverage, sugar, baking soda, and salt. 2. In a second bowl, beat the egg and add the vanilla extract and cinnamon (if desired). 3. Then, incorporate the egg preparation to the yogurt one and mix gently. 4. In an oiled crepe or non-stick pan, pour about 60 ml (¼ cup) of the preparation. Cook over medium heat for 25 to 30 seconds, then turn the crepe. Cook 30 more seconds. Repeat until all the crepes are done, oiling the pan again if necessary. 5. Place the protein crepes in a plate and serve with maple syrup. Nuts in your crepes? For more protein and good fats, add Grenoble walnuts, pecans, or crushed pistachios to the crepe preparation. You can also add wild berries for a fruity taste.
