Deviled eggs are often served during receptions because they are super simple to prepare. At BPT, we wanted to give this recipe an elegant twist, so we decided to use snow crab flesh. After all, egg recipes are not boring! Besides, you could also use Northern prawns, lobster, or pollock instead. It’s just as tasty!
SIMPLY DELICIOUS: We surely love snow crab deviled eggs… but what about avocado deviled eggs? Yum!
Green onions, finely chopped
Salt and pepper
Sesame seeds (as decoration)
First, place the eggs in a pot and cover them with cold water.
Cover the pot and bring to a boil.
Remove from heat and let stand the eggs in the water for 20 minutes.
Rinse the eggs under cold water before peeling them. Lightly roll the eggs on a work surface to loosen the shell, then remove it slowly under cold water.
Cut the more pointed tip of each egg. Keep the top parts and finely chop them.
Using a melon baller, remove a part of the egg yolks only.
In a bowl, mix together the Greek yogurt, mayonnaise, green onions, chopped egg parts, and egg yolks. Season with salt and pepper.
Split the preparation between the 12 hard-boiled eggs.
Season and garnish with sesame seeds.
For this recipe, do not hesitate to pimp your mayonnaise. Make a spicy mayo with homemade Sambal Oelek or add some homemade pesto instead! What about a mayo-Dijon combo? The possibilities are endless!
