The goal is to always keep it cold. Otherwise, the butter might start to melt, which makes the dough harder to work with. A cold dough is however tougher, so you might have to use more strength! Cinnamon - 1 teaspoon 5 mL To discover! Kosher salt - ½ teaspoon 2.5 mL To discover! Unsalted butter, at room temperature - ½ lb ½ pound 227 g To discover! Sugar - ⅔ cup 160 mL To discover! Egg - 1 1 To discover! Vanilla extract - 1 teaspoon 5 mL To discover! Raspberry jam - ¾ cup 180 mL To discover! Icing sugar - 2 tablespoons 30 mL To discover! Preparation Switch to cook mode Valentine's day cookies (Linzer cookies) Step 1 In a bowl, mix together the flour, almond flour, cinnamon, and salt. Step 2 In a second bowl, using a hand mixer, whip the butter and sugar for about 2 minutes or until smooth. Add the egg and vanilla extract. Mix well. Step 3 Incorporate the dry ingrdients to the butter mix. Separate the dough into 2 circles. Cover each piece with a plastic wrap and refrigerate 2 hours. Step 4 On a floured work surface, roll out the first piece of dough until it is about 3 to 5 mm (1/8 to ¼ inch) thick. Using a fluted or round cookie cutter, cut as much cookies as possible. Step 5 Using a smaller cookie cutter, cut out a shape in the middle of each cookie. Then, place the cookies on a baking sheet and refrigerate at least 30 minutes. Repeat with the second piece of dough. Step 6 Preheat the oven to 180 °C (350 °F) and line 2 baking sheets with parchment paper. Step 7 Bake the cookies 10 to 12 minutes, until the sides are golden. Let cool completely. Step 8 Garnish each cookie base with a teaspoon of jam and sprinkle icing sugar on the top parts. Assemble the cookies. Like it? Share it!
