Are you short of ideas for anoriginal but decadent sandwich? Try this trendy cloud egg croque madame. This recipe is the perfect gourmet lunch for young and old! Psst! You can pimp your cloud egg sandwich as much as you want.

Onions, finely chopped

Preheat the oven to 230 °C (450 °F). Line a baking sheet with parchment paper or with a silicone baking mat.
In a large non-stick skillet, brown the onions in the canola oil and butter. Then, add the spinach. Cook until the spinach wilts. Season with salt and pepper, to taste. Keep warm.
Meanwhile, beat the egg whites until stiff peaks form. Transfer the egg whites onto the baking sheet and make two distinct nest shapes.
Note: It’s important to dip the center of the egg whites so that you can put the yolk later on. You can easily do this with a spoon.
On the same baking sheet, put together your croque madames, starting with a slice of bread, followed by ham and onions, and finishing with another bread slice. Sprinkle cheese on top.
Cook in the oven for 4 minutes (the croque madames and egg whites only!)
Place the egg yolks on the nest-shaped whites. Cook 4 more minutes. Put the cloud-eggs on top of the croque madames. Garnish with chives. Serve immediately.
